About Raff... Raff is the Executive Chef and Proprietor of Rustica Private Dining. Growing up in an Italian immigrant family he has been influenced by the idea of sheer freshness and simplicity when it comes to dining. He has a passion for using the flavours and freshness found locally and is glad that it exists here on PEI. Before entering the culinary realm his career spanned various business roles, from marketing to operations management. Dining in the best restaurants, or entertaining others, however, has always been a passion. And like many do in this day and age, he decided to follow it. He relocated to Charlottetown to attend the Culinary Institute of Canada. From there he spent some time in Quebec, discovering its food culture and working at Chateau Mont Sainte Anne. He then returned to Charlottetown and since then has worked in various restaurants throughout PEI, including The Selkirk at the Delta Prince Edward Hotel, Dayboat Restaurant and Glasgow Hills Resort & Golf Club. From commis to chef, his standards have always been high and uncompromising - and they are now channelled into Rustica Private Dining, the "Island-inspired catering service".
